Gluten Free Fruit Bread
With this yummy mix, you'll be able to whip up a moist and dense loaf of fruit bread. Use bananas, applesauce, pumpkin puree, or any other veggie puree you've got. Even carrots! When stuck in the frig overnight (if it lasts that long) it's just heaven on a plate. Yum!
We served this to many non gluten-free folks and it was gone immediately. One person in particular (and you know who you are!) took 1/2 a loaf home to share with his wife. It never made it. In the drive between his home and ours, he ate it all. Every slice!
Our favorite variety is the pumpkin bread. Great for fall and winter and goes great with a hot cup of tea or hot cocoa. Applesauce lends a more delicate flavor and carrots will give you a nice robust loaf. If you're adding bananas try tossing in a cup or so of mini chocolate chips. Swoon!
This bread makes a great potluck side dish - nobody will guess it's gluten-free!
Package makes 1 full-size loaf of bread
Directions
Mix entire bag with the following: • 1 1/2 cups mashed or pureed fruit • 3/4 cup water • 3 Tbl oil • 1 egg Beat with mixer at medium speed until blended. Add in any additions and stir to mix. Spoon into greased load pan and bake at 350F for 50-55 minutes or until tester inserted into center comes out clean. Let sit for 30 minutes before slicing. Bread will become dry and crumbly if overbaked. Add 1 cup of mini chocolate chips and bananas for a yummy loaf. Fruit recommendations: applesauce, pumpkin, squash, zucchini (increase water to 1 cup with this fruit).
