Gluten-Free Doughnut Holes
I admit that I'm bursting with pride over these buggers. Just like cake doughnuts! No grit, no dryness, no crumbly mess. Just a nice, soft, crave-able doughnut hole. Incredible eaten plain, but over the top when rolled in cinnamon sugar or glazed. Completely decadent and probably the best doughnut holes you'll ever make at home. Even better than their gluten-containing counterparts!
Serve plain, rolled in powdered sugar, or dipped into a thin glaze several times for an old-fashioned cake doughnut. Lip smacking good! You'll need a deep fryer or a deep sauce pan to fry these in. Sorry, no baked doughnut holes here!

Package makes 24 good-sized doughnut holes.
Directions
• 1/2 cup hot water • 2 eggs • 3 Tbl oil • 1 tsp vinegar Stir yeast packet into water and set aside for 3 minutes. Mix together eggs, oil and vinegar. Add to yeast mixture, stir well, add dry mix and stir until well-blended. Drop by spoonfuls into hot grease (350F) and fry until golden brown (approx 3-5 minutes) on all sides. Drain on paper towels. Serve with milk and be prepared to defend your share as those who eat theirs more quickly will soon be plotting ways to steal yours. For softer doughnuts: add 3/4 cup of milk or water to batter and fry as above. These doughnuts will be the type you can fill with jelly or other fillings. Frost or sprinkle with powdered sugar.
